This genever is distilled from some of the 120,000,000 kg of bread of unsold bread which goes to waste each year in the Netherlands alone. Each bottle uses around seven slices of this bread. Created with the help of Arthur Kruijt, master distiller at De Tweekoppige Phoenix, the Genever comprises 25% malt wine made from leftover bread sourced from local bakeries. The taste varies slightly from batch to batch of malt wine due to each batch being made with different types of bread.
Nose: Pungent, spicy, herbal, nutty and bready with delicate floral aromas.
Palate: Dry piney juniper, floral and nutty bready notes with light but assertive cardamom and peppery spice.
Finish: Long piney finish with nutty breadiness and light spice.
