Distilled twice and aged in five-gallon oak barrels, Baby Blue is a hand-crafted spirit made inside a hand-crafted distillery. Every square inch of Balcones Distilling, from the 235-gallon copper pot stills hammered by hand to the woodwork and copper plumbing, was made by the distillers at Balcones.

Balcones True Blue 100 Proof Straight Corn Whisky Tasting Notes

Nose: Ripe apricots & mango with cinnamon, singed sugar on top of cocoa and dried chillies on the nose.

Palate: On the palate are notes of deep oak and char, black tea and salty baking chocolate, old leather, roasted corn and coffee.

Finish: The finish is lingering with dried cherries & blackberries followed by toasty bitter chocolate with pleasant oak tannins.
