Barrell Bourbon Batch #008 is made from a mash of 70% corn, 25% rye and 5% malted barley. After the grains are sourced, they are mashed and fermented before being distilled in Tennessee through a copper still. The bourbon is then matured for five years in #4 charred, American white oak barrels. The intense southern heat causes the wooden barrel staves to expand and contract, interacting with the whiskey and contributing notes of saddle leather, burning tobacco and barbecue as it matures. Once the bourbon has matured for over nine years, it is bottled at cask strength of 132.8 proof without the use of chill-filtration (chill filtration removes the cloudiness that is natural to bourbon, but also removes the fatty acids and esters that contribute to the whiskey’s overall flavor and complexity).

Nose: Aroma of stone fruit and melons, as well as oak from the barrels.

Palate: The palate has notes of corn and wild berries.

Finish: A smooth, caramel finish with a hint of sweet barbecue.

Founded in 2014, Barrell Craft Spirits scoops up extra casks of premium Bourbon and Rye and bottles em up at full strength. Each batch is completely different. Sometimes the coolest casks on the market are Tennessee-style Whiskeys, sometimes theyre Kentucky Bourbon. The good stuff could be straight, or it could be a finished wood. The point is that they find the best odd lots and left-overs that would more likely be tossed into a generic blend and sell it to us in all of their glory.
