Sotol Coyote Durango is produced by Alejandro Sols in Cuencame?, San Antonio, Durango using Dasylirion Cedrosanum. The pias are steamed with an autoclave and then fermented in wood tubs coated with stainless steel. This sotol is double-distilled in stainless steel stills. Sotol Coyote Durango has distinctive aromas of hazelnut and almond with notes of butter and yeast coming from the fermentation. On the palate, it is semi-sweet with medium intensity and slight minerality.
Nose: Peculiar aroma, nuts with a sensation of hazelnut and hints of almond, accompanied by mineral notes; very present aromas of butter, dairy and yeast, from fermentation.
Palate: Very pleasant on the palate, starchy sensation (semi-sweet) in the mouth, medium warmth and medium intensity, we confirm the nuts and their medium character.
Finish: Finish is smooth and long.
