Erstwhile describes tobal as “the Yoda of all agaves”. The smaller plant has broad leaves and takes between 8 and 12 years to mature and creates a sweet, mellow, and floral mezcal. Erstwhile Tobal Mezcal is crafted in Santiago Matatln, Oaxaca by Juan Hernndez Mndez & Hortensia Hernndez Martnez. The agaves ferment naturally in open wooden vats, before being distilled in a copper alembic still. Bottled at 88 proof, it’s a traditional, delicious, and approachable take on the popular Mexican spirit.
Nose: The profile is sweet and floral with plenty of tropical fruit notes. There’s also banana, cooked maguey, and adobo aromas underneath.
Palate: Quince and vanilla, with a hint of caramel sweetness.
Finish: A dash of spice and some smoke round everything upp nicely.
Meet Silverio Garca Luis and Epifania Gmez Meja, a producer family of Zapotec heritage based in Rancho Blanco Gil, Oaxaca. Counting Silverio and Epifania, there has been at least three generations of mezcaleros in the Garca family. Epifania did not grow up in a mezcal family, but learned the ropes and became a mezcalera of her own right after marrying into the Garca family. She was recently recognized as a Woman in Mezcal in the January 2020 edition of El Mezcal, an online publication by the Mezcal Regulatory Council (also known as the CRM, short for Consejo Regulador del Mezcal).
