Their 4-Grain Bourbon uses the Bloody Butcher corn, as well as malted wheat, rye, and barley. According to Bourbonveach.com, it has been aged in both 53 gallon barrels and smaller 30 gallon barrels. It could complement something summery, like a grilled shrimp salad or barbequed salmon. Itd cut through the fat, wouldnt get in the way in the meal, and would be unusual enough to comment on. On subsequent sips, smoke emerges, but its more of a peppery, culinary smoke than a peat.

Nose: Nose has sweet cream candies, Hydrangeas, Morning Glories, Geranium, Dried Apricots and Red Berries, Peach Cobbler, Brown Sugar, and Blackberry Jam.

Palate: The palate is complex and rich with vanilla, nutmeg, clove and toasted pecans.

Finish: A long finish of vanilla and mint with a lingering hint of baking spices.
