A brilliant sake from le Four, which means “four islands”, a reference to to the four Japanese main islands of Honshu, Shikoku, Kyushu and Hokkaido. Though there’s only four ingredients, sake rice, water, yeast and a koji, this crisp bottling makes a brilliant aperitif, and works wonderfully alongside salty foods.
