The first release from Rebel Rabbet, the experimental side project of The London Distillery Company’s Matt McGivern and Dylan Bell. RES1, also known as The Holy Trinity, is made with a combination of productions techniques from beer, whiskey and gin. With help from local brewery Anspach & Hobday, they brewed oats, Special B malt, Extra Pale Maris Otter barley and rye with Saison yeast (the “beer” bit), distilled it to create new make spirit (the “whiskey” bit – it’s an old Irish whiskey recipe, hence the ‘e’), then rectified it with pink pepper, cassia, coriander seed, liqourice, quince and vanilla (the “gin” bit).
