Founded by husband-and-wife team Timo and Ashby Marshall, Spirit Works Distillery in Sonoma County is a grain-to-glass producer of spirits such as vodka, gin, sloe gin, and whiskey. Their Straight Wheat Whiskey is distilled from 100% organic red-winter-wheat grown in California’s Sacramento Valley. It ages for at least 2 years in 53-gallon, charred, new American oak barrels before being bottled at 45% ABV without chill-filtration.

Spirit Works Straight Wheat Whiskey Tasting Notes

Nose: Find surprising fruit undertones on the nose, along with oak, hay and light vanillins.

Palate: The palate is soft and somewhat one dimensional, with dry oak, grain and a touch of spice.

Finish: The finish livens things back up with overripe bananas, brown sugar and toffee.
