Thirteenth Colony Southern Rye whiskey is aged for 2 years in new charred American oak and is the second whiskey released from the distillery. It is a blend of 96% rye (very high rye content and a pleasure for purists) with a 4% mix of barley.They mention it is “finished” with french oak spirals, which is a style of introducing more wood flavor into the spirit and accelerating aging.
Nose: The nose reveals a tremendous complexity of spices including pepper and cinnamon, with a hint of dryness and slight overtones of citrus and oak.
Palate: A creamy, almost buttery mouthfeel is complemented by vanilla and butterscotch.
Finish: A long, slow peppery finish with a hint of sweet honey.
Thirteenth Colony Distilleries was founded by four friends deep in the south of Georgia. Today, they still pride themselves is “southern style” and handmade spirits “by friends, for friends.” The name celebrates the state of Georgia, the “thirteenth colony” of the original 13 that founded America.We’re told by their distiller Graham Arthur that they try to source their grain locally wherever possible and make a point of returning the mash to ranchers for feed. Their yeast is their own strain they reuse from batch to batch, which would qualify their spirits as “sour mash.” In response to an interview with the Whiskey Apostle, they both “produce and source” their whiskey but do not disclose all of their sources other than mentioning “friends out west.”
