Biodynamic farm has praised by many winemakers, but Waterford is introducing that to the world of whisky with biodynamic barley grown by Irish growers (Trevor Harris, Alan Mooney, and John McDonnell). Fascinating stuff, and rather fantastically full-flavoured, too.

Waterford Biodynamic – Luna 1.1 Irish Whiskey | 700ML Tasting Notes

Nose: Super spicy, almost like a rye whisky. Theres cinnamon, cardamom and freshly-baked rye bread, with apples, peaches and apricots.

Palate: Its alive with spice: black pepper, cinnamon and ginger. Then creamy, almost cream cheese notes, pastry, vanilla and sugared almonds with orchard fruits.

Finish: Those amazing aromatics linger mingled with creamy custard. Very long.
